St. Patrick's Day Feast

Boxty
  1. 2 tablespoons butter
  2. 1 cup mashed potatoes
  3. 1 cup flour
  4. 2 eggs
  5. 1 teaspoon baking powder
  6. 1/3 cup milk
  7. 1/2 cup finely grated raw potato
  8. Salt and pepper to taste
Champ
  1. 3 cups mashed potatoes
  2. 2 to 3 cloves garlic, minced
  3. 3 or 4 scallions, chopped
  4. Salt & pepper to taste
Colcannon
  1. - 3 cups mashed potatoes
  2. - 2 cups chopped cabbage, blanched
  3. - 1 tablespoon butter
  4. - 1 cup diced onions
  5. - 6 strips bacon, cooked & diced
  6. - 2 or 3 cloves garlic, minced (or 1 clove elephant garlic)
  7. - Chopped green onions for garnish
Irish Soda Bread
  1. 3 1/2 cups flour
  2. 1 teaspoon salt
  3. 1 teaspoon baking powder
  4. 1 1/2 cups buttermilk
  5. 3/4 cup currants or raisins (optional)
Boxty
  1. Melt butter in skillet. Mix rest of ingredients together and drop by spoonfuls into skillet. Cook pancakes about 4 minutes on each side or until golden.
Champ
  1. Heat mashed potatoes. Add remaining ingredients and serve.
Colcannon
  1. Mix potatoes and cabbage together in large bowl. Sauté bacon, garlic and onions in butter, then add to potato mixture.
Irish Soda Bread
  1. Mix all ingredients and knead lightly. Place on a buttered baking sheet and cut deep cross in center with a sharp knife.
  2. Bake at 450 degrees for 15 minutes, then reduce to 400 degrees and bake about 30 minutes longer or until the top is golden brown and bottom sounds hollow when tapped. Serve warm.
Notes
  1. Serve these dishes with bacon, ham, or roast pork.
  2. Serve with Coyote Moon Vineyards Frontenac Red or Frontenac Gris.
