Pumpkin Alfredo
A simple and versatile dish that is perfect for this time of year. Chef Chris Manning prepares Pumpkin Alfredo
  1. 1 tablespoon olive oil
  2. 2 or 3 cloves garlic, minced
  3. 1/2 cup pureed pumpkin
  4. 2 cups heavy cream
  5. 1/2 cup grated Parmesan or Asiago cheese
  6. Salt & pepper to taste
  7. 1 pound pasta, cooked and drained
  1. Sauté garlic in olive oil about 30 seconds. Add pumpkin and work it around in the pan. Then add heavy cream and simmer on medium-low heat until it thickens.
  2. Stir in grated cheese. Add seasonings to taste. Stir in cooked pasta.
For a variation, Chef also uses
  1. 1/2 cup diced onions
  2. 1/2 cup diced bell peppers (red, green or both)
  3. 1/2 cup sliced mushrooms
  4. 1/2 pound Italian sausage, cooked and sliced
  5. The onions, peppers and mushrooms are sautéed along with the garlic. Then he stirs in the sausage (you could also use shrimp or pretty much any meat), then adds the cream, cheese, seasonings and pasta.
  1. The dish pairs well with Naked Chardonnay from Coyote Moon Vineyards.
