Pumpkin Alfredo w/ Shrimp and Cavatappi Pasta
A seafood dish celebrating the harvest season.
  1. - 2 tablespoons olive oil
  2. - 1 cup sliced mushrooms
  3. - 2 white portion of green onions, diced
  4. - 2 garlic cloves, minced
  5. - 2 31-40 count peeled and deveined shrimp
  6. - 1 oz. sherry Wine
  7. - 2 cups solid pumpkin
  8. - 2 cups heavy cream
  9. - 1/4 cup grated Parmesan cheese
  10. - Salt and pepper to taste

  2. In a 14" saute pan on medium heat, ass the first three ingredients. Cook until mushrooms begin to brown.
  3. Add the garlic and shrimp. Cook until shrimp is pink on both sides and cooked through.
  4. Add the pasta, pumpkin and sherry wine. Stir to combine and add heavy cream and Parmesan. Turn to low heat, add salt and pepper.
  5. Continue to stir slowly, coating the pasta and allowing sauce to thicken.
  6. Serve with shredded with asiago and minced green onions.
  1. Pair with Coyote Moon's Gold Label Chardonnay Wine.
