Irish Soda Bread
St. Patrick's Day is coming up and Chef Chris Manning has a perfect traditional recipe. It's Irish soda bread and it's easy to put together, especially for kids. You can eat it with butter and jam or use it to create interesting sandwiches. The chef uses it to make a panini filled with bacon, Swiss cheese and strawberry jam.
  1. - 4 cups all-purpose flour
  2. - 2/3 cup granulated sugar
  3. - 5 teaspoons baking powder
  4. - 1 teaspoon salt
  5. - 1teaspoon baking soda
  6. - 1 stick butter, softened
  7. - 2 cups raisins
  8. - 2 eggs
  9. - 2 cups buttermilk
  10. - 3 tablespoons sour cream
  1. Combine flour, sugar, baking powder, salt and baking soda in a large mixing bowl. Cut butter into cubes and work it into the dry ingredients with fingers or pastry cutter as you would biscuits or a pie crust.
  2. Blend together beaten eggs, buttermilk and sour cream. Scatter raisins over the flour mixture and pour egg mixture into mixing bowl. Blend gently until dough is formed.
  3. Place dough in two greased loaf pans and bake at 375 degrees for 40 to 60 minutes.
