Gaucho Steak
With the first big warm weather holiday of the year upon us, our favorite chef is turning south of the border for a delicious steak recipe.

Ingredients
  1. The first item of business? Seasoning for the steak.
Here's the chef's recipe
  1. 1 tsp. cayenne pepper
  2. 1 tsp. granulated garlic
  3. 1 tsp. granulated onion
  4. 1 tsp. paprika
  5. 2 tsp. salt
  6. Make sure you take your steak out of the 'fridge and season it 15-20 minutes before cooking; Chef Manning will tell you the meat will cook more evenly.
Now, the sauce
  1. 1 cup, lightly packed parsley
  2. 1/2 cup, lightly packed fresh oregano leaves
  3. 5 garlic cloves, chopped
  4. 1 small shallot, peeled and chopped
  5. 1 green onion, chopped
  6. 1 tsp. salt
  7. 1/2 tsp. ground black pepper
  8. 3 pinch, crushed red chiles
  9. 3/4 cup, olive oil
  10. juice of half a lemon
  11. 2 tbsp. sherry vinegar
Instructions
  1. Place the first eight ingredients in a food processor and pulse until minced. Add the remaining ingredients and pulse until mixed thoroughly. Use as sauce for the steak - or a marinade for chicken or pork.
