Blackened Chicken & Caper Jalapeño Mayo

Blackened Seasoning
  1. - 1 tablespoon paprika
  2. - 2 1/2 teaspoon salt
  3. - 1 teaspoon garlic powder
  4. - 1 teaspoon cayenne pepper
  5. - 3/4 teaspoon ground white pepper
  6. - 3/4 teaspoon ground black pepper
  7. - 1/2 teaspoon whole leaf thyme
  8. - 1/2 teaspoon whole leaf oregano
  9. Caper-Jalapeño Mayo
  10. - 1 cup mayonnaise
  11. - 1 tablespoon coarse-chopped capers
  12. - 1 tablespoon picked jalapeños
  13. - 1 green onion, chopped coarsely
  14. - 2 cloves garlic, chopped coarsely
Blackened Chicken
  1. Combine all Blackened Seasoning ingredients.
  2. Cover chicken with the spices and let it sit in the fridge for a few hours.
  3. Saute with butter in a cast iron skillet.
  4. Serve with Caper-Jalapeño Mayo.
  5. Caper-Jalapeño Mayo
  6. Combine all ingredients and chill for at least an hour. Use with grilled and fried foods.
